WALTER BEEF PROGRAM

Purchasing beef is an investment. We offer our beef only by the whole and half steer. By purchasing beef in this manner, you receive multiple beef cuts in one shipment, offering a greater savings, higher quality, as well as the convenience of having healthy and delicious beef available in your home for you and your family. You may choose from a grass-fed steer or grass-fed, grain finished. We believe that our grass-fed, grain finished cattle offer premium flavor.

You are investing in a live animal. We sell it by the hanging weight (the total weight of the beef once it arrives at the abattoir before the dry aging and cut out process). Hanging weight is the weight of the carcass without the head, hide, hooves, and innards. Hanging weights will vary. Each animal is unique in its capacity to finish.  Your beef will be dry aged for fourteen days, butchered according to your specifications, packaged, and frozen. You will receive 65% of the hanging weight in packaged cuts. The actual take-home weight is hanging weight after the bone and fat has been removed. You are responsible for covering the cost of the butcher, but we will manage the processing for you, and put the charges on your Walter Cattle invoice. Please contact us and we will let you know when we plan to butcher next. Prices are subject to change based on feed and butcher cost.

Keep in mind, at these prices you are receiving premium cuts of meat (t-bones, ribeyes, sirloin, roundsteak, rump roasts) at a lower price of grass-fed ground beef that you may purchase at your local grocer.

Upon placing your order, you will be emailed a form so that you may specify how you would like you beef processed. Your beef will be delivered frozen. If you are within 50 miles of the ranch, delivery is free. There is a $.50/mile delivery fee outside of the 50 mile range of our Ranch in Calvin, Oklahoma. When we deliver, we try to combine orders so that the delivery charge is disbursed among several orders. It is imperative that you put your meat in the freezer immediately in order to preserve the delicious flavor.  A whole beef requires 14 cubic feet of freezer space. A half beef requires 7 cubic feet of freezer space.

Below is an estimate of how much beef you can expect when placing an order for a whole steer. If you purchase a half steer, divide these estimates by two. Keep in mind that these numbers vary based on the total hanging weight of the steer that you have purchased and how you have your meat processed.
